I actually got my pants tailored already, and here's what the tailor did: He asked me to stand in just socks (without shoes), then measured the point where the trousers exactly touched the ground (see right hand side photo)

I dont send much of anything back when I go out to eat at a restaurant but you bet your ass Ill be sending back a wet caesar salad if I ever get served one
